In an over-saturated sourdough pizza scene, new kid on the block, GALLIO, is set to make quite a stir. This currently delivery-only brand brings a new take on pizza, or should that be an old one, to the capital mid-August. Using ancient grains to create a thoroughly modern, better-tasting and better-for-you pizza, the menu bursts with bold and vibrant Mediterranean ingredients and has been created by the GALLIO team, in collaboration with Ben Tish, food writer, chef and culinary director of The Stafford Collection which includes Norma London restaurant.

So, what’s different about GALLIO’s pizza? Well, other than the bold flavours and impeccably sourced Mediterranean ingredients, the difference is all in the base. The dough is made from a mix of ancient grains that delivers not only a better taste, but a whole host of nutritional benefits – high in protein and antioxidants as well as being an excellent source of fibre. It’s also easily digestible so you can say goodbye to that unwelcome post-pizza bloat. These ancient grains are mixed with nothing more than sea salt, natural yeast, extra virgin olive oil and filtered water and then left to prove for 36 hours before being handcrafted to make the GALLIO signature thin and crispy base.
Toppings are impeccably sourced and reflect the richness and variety of cuisines found in the Mediterranean to create interesting full of flavour combinations. Options include the likes of spiced lamb, labneh, rose harissa and pickled chilli; and chestnut mushrooms with olive oil, spinach, Aleppo chilli and pumpkin seeds. A seasonally changing special kicks off with a Sicilian-inspired red prawn pizza with grezzina courgettes, red chilli and wild fennel from Ben Tish.
All pizzas will be customisable with add-on ingredients such as fennel salami, aged Manchego, piquillo peppers, buffalo mozzarella, chorizo, feta and vegan ‘sheese’ with gluten-free and vegan options also available.
Although the spotlight is firmly on pizza, there’s also flatbreads, dips, vibrant healthy salads like the vegan quinoa with green lentils, spinach, avocado, spring onions, mint and parsley and sharing mezze-style bowls such as beetroot borani, yoghurt, dill, Medjool dates, feta and walnuts; and Datterini tomatoes with chilli, fresh herbs, sumac and pomegranate molasses. With everything made from scratch and freshly prepared in Gallio’s kitchen, this really is feel good food that delivers on taste and flavour.
Desserts are all made from scratch and inspired by ingredients found in the Med – a sweet pizza topped with fig, mascarpone and wild mountain honey pizza, or a bitter chocolate and almond cake with orange flower water. Plus, there’s award-winning, artisan ice cream from Hackney Gelato.
The menu offers exceptional value with pizzas starting from £6, all sharing bowls at £5.50, small and large salads from £4 and £7 respectively and desserts at £5.
