To celebrate the return of game season, Covent Garden’s favourite Yakitori-ya, Jidori, is serving a venison-inspired twist on the traditional Japanese skewer.
Drawing on modern Japanese cooking, Head Chef Brett Redman has developed a signature game tsukune marrying the smoky notes of venison with vibrant Japanese flavours. Combining minced British venison with pork belly, shiso and juniper, the tsukune are marinated in tare, a traditional Japanese soy sauce fusing sake, mirin and ginger, before being barbecued over custom made Kama-Asa Shoten grills, and served with an egg yolk and coriander miso for dipping.
The venison tsukune is priced at £7 for two skewers and is available to order from Monday 12th August.
