Sophie will work closely with finest local suppliers to bring seasonally-led menus celebrating simplicity, fine ingredients and showcasing her creative flair.
Signature dishes at dining destinations The Restaurant and The Garden will include: fresh sea bream tartare with sumac, pomegranate and mint; or stone bass ceviche with yuzu, jalapeño and fennel from the raw fish bar. Lobster cocktail with Bloody Mary jelly, and steak tartare with whipped marmite butter and sourdough toast, sit alongside a daily changing catch of the day, and a selection of 30-day dry aged steaks, cooked to perfection on the grill, served with foie gras madeira jus or caramelised onion hollandaise. The menu will also feature a strong selection of seasonal plant-based dishes such as; burrata with chargrilled nectarine and basil panzanella, and whole steamed globe artichoke with mustard vinaigrette.
The bars will offer small plates such as buttermilk fried chicken with lime and coriander sour cream and hot sauce; and market fresh crudité platter with soft boiled quail eggs, aged parmesan chunks and herb crème fraiche. The hot fish platter – complete with grilled scallops in chilli butter, squid, chargrilled prawns, pickled samphire and seaweed tartare sauce – is perfect for sharing over a bottle of bubbly.
