Game season has come around once again and, in celebration, Executive Chef Santosh Shah has created a decadent six-course tasting menu. Showcasing the best seasonal ingredients, get ready for the game feast of the season, available exclusively at pan-Indian destination Baluchi from 12th August 2019.
Complementing the naturally smoky notes of game, Santosh’s menu combines traditional Indian flavours with an innovative twist. Enjoy a masala game mince puff pastry pie, served with mint and tamarind chutney; whilst clove smoked partridge is marinated with black spice, and accompanied by wild mushrooms, pancetta and pumpkin chutney. In a nod to the Glorious Twelfth, grouse is served with black cabbage poriyal, tandoori turnip, and blackberry and moilee sauce.
Finish on a sweet note with lentil and yoghurt ice cream, followed by lime, chocolate and liquorice cake.
The six-course tasting menu is priced at £65 per person, with wine pairings available at £60 per person.
