Stand-out dishes from Vivek Singh’s innovative modern Indian menu include Malabar style mussel and date pickle on toasted brioche, Kerala spiced lobster soup flamed with Cognac and Raan – slow braised lamb shoulder with fennel and nutmeg sauce. Decadent spiced desserts include the Himalayan Queen – a trio of pistachio kulfi, mango and thandai ice cream with spiced meringue, flamed with rum.
Cocktails are not an afterthought, having been curated by award-winning mixologist, Tony Conigliaro, best known for transforming London into the mixology capital of the world with his “liquid witchcraft”.
