On Saturday 18th June, sushi-lovers around the world will be celebrating International Sushi Day and, to mark the occasion, Executive Chef, Padam Raj Rai of leading London Japanese restaurants, Hot Stone and RAI, has created two limited-edition dishes exclusively for the weekend.
Hot Stone Islington, critically acclaimed for its award-winning sushi, will be serving a special butterfish maki roll (£24) for the weekend. Fresh prawn tempura, avocado and cucumber will be tightly wrapped in koshihikari rice – widely considered the finest sushi-grade grain in the world – before being topped with seared slices of butterfish. Teriyaki glazed chunks of tuna tartare sit on top completing the show-stopping roll, with a sprinkling of finely cut chives. Available 17-19th June.
Sister restaurant RAI in Fitzrovia, whose food is routed in traditional omakase, will be celebrating with a delicious sushi box (£37) featuring some of the finest types of fish from otoro (fatty tuna), to hamachi with caviar and salmon belly, alongside freshly grated Japanese wasabi and three-years aged soy sauce. Available 17-18thJune only.
