To celebrate World Vegan Month this November, Executive Chef Santosh Shah has launched a seven-course plant-based tasting menu at Baluchi, London’s show-stopping pan-Indian dining destination at The LaLiT London – a luxury boutique hotel.
Having arrived at Baluchi from the award-winning Cinnamon Group, the limited-edition vegan tasting menu showcases Santosh’s expertise in modern Indian cookery, using a range of delicate Indian spices and seasonal ingredients to elevate plant-based dining to new heights.
Dishes such as Subz ka thal – tandoori roasted cauliflower, tandoori aloo, baby aubergine, gun powder and sabudana papad – demonstrate Santosh’s passion for tandoor cooking; whilst the grilled tofu with coconut sukha, spiced tofu mince, spinach and superseeds will delight vegan and non-vegan diners alike. Finish on a sweet note with a tapioca kheer and carrot halwa for dessert.
Enjoy a pre or post dinner cocktail in the hotel’s Teacher’s Room bar, where seasonal serves will include the Headmaster Cocktail (bourbon, pimento dram, rhubarb liqueur, calvados) and the Kesariya Martini (saffron gin, fresh lime juice, honey, egg white), expertly mixed and muddled to order.
The seven-course vegan tasting menu is priced at £55 per person, and will be available throughout November.
