Nordic restaurantAquavit London in St James’s Market has appointed Jonas Karlsson as Head Chef. With over two decades of experience in the industry, Jonas will be responsible for curating the Aquavit London menus and managing the kitchen team on a day-to-day basis.
Born in Sweden, but having lived in London for 21 years, Jonas’ cooking remains firmly rooted in his Swedish upbringing. His simplistic yet considered approach sees subtle twists transform traditional Scandinavian dishes into modern classics that shine a spotlight on quality local ingredients.
Having occupied the position of Head Chef at the likes of 100 Wardour St; Heaton Butler and Baine; and Harvey Nichols ‘Fifth Floor Restaurant’, as well as having been Chef de Partie at Coq d’Argent and Michelin-starred Orrery, Karlsson has developed a signature style that encapsulates the essence of both simple modern European and Scandinavian food. This approach will see Jonas bring a new refinery to Aquavit’s quintessentially Scandinavian dishes and Nordic-inspired menu.
